      原料:筆管蛸、韭菜、鹽、醋、蔥姜等

      做法:

      1、筆管蛸清洗干凈,韭菜擇去爛葉,放淡鹽水中浸泡一段時(shí)間

      2、鍋內(nèi)燒一鍋水,水中放一勺鹽,水開后,將筆管放開水中汆燙,燙好后立刻撈出

      3、韭菜瀝干水分切成小段,蔥姜切片備用

      4、鍋里放一勺油,油熱后,放蔥姜入鍋爆香,放入筆管蛸,噴入一大勺醋,加入幾滴白酒,加入少許鹽,翻炒幾下,將韭菜段入鍋滑炒,關(guān)火,翻炒均勻即可出鍋

       

      小竅門:

      1、韭菜是使用農(nóng)藥很厲害的一種菜,韭菜加熱過火味道不好,所以,韭菜必須要清洗干凈,最好放鹽水中浸泡

      2、筆管蛸很容易熟,汆熟的標(biāo)志是,筆管的肚子一個(gè)個(gè)鼓起來,這時(shí)就可以撈出來

      3、調(diào)味時(shí),一定要多加些醋,筆管喜醋,有點(diǎn)酸味才比較好吃,加幾滴酒可以起去腥提鮮作用

      4、筆管下鍋后到出鍋一共用不上兩分鐘,時(shí)間長(zhǎng)了,肉質(zhì)就老了,不滑嫩了
