'生命之糧'來到上海 'Food for Life' in Shanghai 從去年七月開始,我們就發(fā)布了一系列史無前例的Food For Life專題營養(yǎng)講座和烹飪課程。 Starting from July last year, we have been launching our brand new Food For Life series of nutrition talks and cooking demos. Food For Life由尼爾巴納德醫(yī)學博士和他創(chuàng)始的位于美國華盛頓的美國醫(yī)師醫(yī)藥責任協(xié)會共同發(fā)起創(chuàng)立。朝著使用植物性飲食和營養(yǎng)學預防及扭轉疾病這一目標,F(xiàn)ood For Life項目已在美國開展了超過十二年的時間。 The Food For Life program was designed by Neal Barnard, M.D., and his organisation the Physicians Committee for Responsible Medicine (PCRM) in Washington DC and has been running in the USA for over 12 years, with the aim of using plant-based food & nutrition as a way to prevent and reverse illnesses. 這一課程已來到上海,由上海地區(qū)首位Food For Life導師夏婉婷及其Sprout Lifestyle團隊主辦,共分為Food For Life癌癥、糖尿病、體重管理、兒童健康(僅為兒童開設)、員工健康等多個系列。 Food for Life is finally in Shanghai. '生命之糧'癌癥專題 'Food for Life' Cancer Project 四十多年前,美國悄然開始了一場'癌癥之戰(zhàn)'。然而當下的數(shù)據(jù)顯示,在人的一生中每兩位男性中就會有一人罹患癌癥,在女性群體中的比例是每三位女性中的一人。每一年,在美國有約150萬人確診為癌癥患者,而四位之一的死亡產(chǎn)生原因也正是癌癥。同時,研究已發(fā)現(xiàn),在美國超過三分之一的癌癥患者最終死亡的原因是極不平衡的飲食方式,更糟糕的是,大部分人實際上都沒有意識到這其中的關聯(lián)。 More than four decades ago, the United States declared a “war on cancer,” yet current statistics predict that during our lifetime, one in two men and one in three women will develop cancer. This amounts to 1.5 million people being diagnosed with cancer in the United States each year, and cancer causing nearly one-quarter of every death in America. The National Cancer Institute research shows that as much as 33 percent of cancer risk may be related to diet. In this class, you will learn about the right food choices that can help reduce the risk of developing cancer as well as prevent a recurrence. 第二部分:用低脂肪高纖維的食物為身體加油 Class 2: Fueling Up On Low-Fat, High-Fiber Foods 脂肪不僅會阻礙免疫系統(tǒng)的正常工作,還會迫使荷爾蒙作用,在一定程度上意味著更高的概率罹患荷爾蒙相關的癌癥,如乳腺癌和前列腺癌。而食物纖維能夠幫助身體擺脫毒素、荷爾蒙垃圾、身體不需要的膽固醇、化學物質(zhì)以及其他身體不喜歡也不需要的東西。 Dietary fat not only hinders the immune system, it also drives hormone production, which can mean higher rates of hormone-related cancers such as breast and prostate cancers. Fiber helps your body rid itself of toxins, waste hormones, excess cholesterol, chemicals, and other undesirables. 幫助免疫系統(tǒng)正常運作以及過濾排除體內(nèi)垃圾毫無疑問是極其重要的。如果飲食里缺失了纖維,這些多余的化合物常常會反過來侵蝕我們的血液系統(tǒng),最終導致患癌風險的增加。因此,預防和抵抗癌癥計劃的第一步也是十分重要的一步,就是去掉飲食中的肉、奶制品,油炸食品以及其他多油的食物。想身體健康,最簡單的方法往往就是吃天然的低脂食物,以及用健康少油少脂肪的烹飪方法。 It is especially important in helping the immune system function properly, as well as facilitating the removal of waste from the body. Without fiber in the diet, these excess compounds are often reabsorbed into the blood-stream, leading to a possible increased risk of cancer. Steering clear of meat, dairy products, fried foods, and other fatty fare is an important first step in preventing and surviving cancer. The easiest way to be healthy is to build your meals from foods that are naturally low in fat and to use cooking methods that do not require added fats or oils. 在這部分中,你將學習如何采用全谷物、豆類、蔬菜和水果準備美味卻低脂的餐食。 In this class you will learn how to prepare delicious, low-fat dishes made from whole grains, legumes, vegetables, and fruits. 第三部分:探索奶制品和肉制品的健康替代物 Class 3: Discovering Dairy and Meat Alternatives 當癌癥相關研究開始深入到飲食和癌癥的關聯(lián)時,最顯著的發(fā)現(xiàn)之一就是那些不吃肉和奶制品的人往往有較低的概率罹患癌癥。 When cancer researchers started to look for links between diet and cancer, one of the most noticeable findings was that people who avoided meat and dairy products were much less likely to develop the disease. 吃奶制品會對身體造成一些令人擔憂的生物性變化,其中就包括血流中胰島素樣生長因子1的增加??茖W研究早已表明胰島素樣生長因子1的水平就是乳腺癌細胞和前列腺癌細胞發(fā)展的催化劑。 Consuming dairy products causes worrisome biological changes in the body, including an increase in the amount of insulin-like growth factor 1 (IGF-1) in the bloodstream. This link is in part due to the high-fat, high-iron, and fiber-free characteristics of meat compared to plant foods, as well as the formation of carcinogens when meats are cooked. Cancer-fighting compounds such as antioxidants, mainly found in fruits and vegetables, assist in halting free-radical damage, which can otherwise lead to cancer development. 健康體重的控制對預防一系列慢性疾病也十分有益。研究表明,體重輕的人比體重重的人不易罹患癌癥。同時,減重也很有可能能夠幫助被確診為癌癥患者的人們提高生存幾率。 Healthy weight control is also essential for warding off a variety of chronic diseases. Studies have shown that slimmer people are less likely to develop cancer, compared with their heavier counterparts.
